Helberg Barbecue | Our Story

Salt, Pepper, and a Whole Lotta Prayer

Phillip and Yvette Helberg started with a backyard smoker, a shared faith, and a simple belief: if you do right by people and do right by the food, everything else follows. Today, we still stoke our oak wood fires throughout the day, make sausage by hand, use USDA prime beef, and cut every order fresh. The details matter because every meal is a chance to serve someone well. Helberg Barbecue has grown, but the heart behind it has not changed. We are grateful to welcome families, neighbors, and travelers to our table, and we want every guest to leave feeling fed, cared for, prayed for, and loved.

Philip and Yvette started cooking for people they loved — in the backyard, with a smoker and a whole lot of faith. Those humble beginnings in Waco are still the heartbeat of everything Helberg Barbecue is today.

The Craft Behind Every Plate

Oak wood fires stoked all day long, USDA prime beef, hand-made sausage — everything cut to order right in front of you. Good barbecue takes time, which is exactly why they don't cut corners.
Built Back Stronger

Built Back Stronger

When a fire took their original restaurant in 2023, Philip and Yvette had a drive-thru running within weeks. When another local restaurant suffered the same fate, they donated half of Helberg's revenue to help them recover.
Service as a Calling

Service as a Calling

Every guest who walks through the door is prayed for — rooted in 1 Peter 4:10. For the Helbergs, great barbecue and genuine hospitality have always been one and the same.
Recognized, and Still Grateful

Recognized, and Still Grateful

Texas Monthly named Helberg one of the Top 50 BBQ Joints in Texas — twice, consecutively — alongside Yelp's Top 100 and national recognition. They'll tell you it's just confirmation the calling is being fulfilled.
